Making fresh almond milk is super easy. The key, as with all healthy cooking, is preparation. In this case, you need to soak the almonds overnight and then make it in the morning. Once you drink FRESH almond milk, you will never drink that stuff out of a box again!
Ingredients (Serves 4 people, 10 min + overnight prep):
- 1 cup RAW ORGANIC almonds soaked in a glass container with 3 cups filtered water
- 2 tbsp raw honey
- 1 tsp organic ground vanilla bean if desired
- High powered blender (a VITAMIX is worth the investment!)
- Metal mesh strainer
- Second pitcher or other container for strained milk
In the morning after almonds have soaked overnight, drain and rinse and put into blender. Add 4 cups filtered water, cover blender tightly and blend on highest setting for 2 minutes.
Set strainer on top of your second pitcher and slowly pour mixture from blender into pitcher. It will be thick and have lots of almond “mulch” so give it a minute to drain through. Dispose of sediment in strainer, and repeat until all of the mixture has be strained from blender into pitcher. Rinse the blender and then RESTRAIN it again from pitcher to blender and perhaps even a third time to make sure that the milk is completely free of any sediment. Put it back in the blender, add the honey and vanilla and blend quickly. Frothy, delicious, fresh and ready to enjoy. Yields about 4 cups. Lasts in the refrigerator for about 2 days max. It will be pungent and sour when it has gone bad. xxx, Leah
