There’s a Chia Pudding at Gjelina, our local purveyor of food delights that’s madness. I don’t know what else to call it! This pudding haunts me because the consistency and flavor is PERFECT. Through many experiments, I’ve come up with this chocolate aphrodisiac version. Like Gjelina’s, it’s topped with fresh berries and….it’s pretty insane.
Ingredients (4-6 servings):
- 3/4 cup chia seeds
- 1 cup fresh raw cashew milk
- 1 cup fresh raw coconut water
- 1 cup filtered water
- 1 cup coconut meat (ideally freshly scraped from the coconut or you can buy frozen raw organic)
- 1 tbsp raw organic cacao powder
- 1 tsp mucuna powder
- 1 tsp ho so wu powder
- 1 tsp reishi powder
- 1 tsp chaga powder
- 2 droppers full of chocolate flavored stevia
- 1 1/2 tsp cinnamon
- 1 tsp cardamom
- 2 tsp vanilla paste
- pinch of sea salt
For each serving, a large handful of berries. I like a combination of raspberries, blueberries, blackberries, and strawberries.
Blend the cashew milk, coconut water, filtered water, coconut meat, all the powders, the stevia, cinnamon and vanilla paste in a blender until smooth. Be careful not to over blend or over heat so the nutrients are kept raw and intact. Blend for no longer than 1 minute.
In a deep large bowl (I used my glass food container that’s a 10″ diameter) pour blended mixture and add chia seeds. Gently mix to with a wooden spoon to combine. Leave for 3-5 minutes until it begins to thicken, stir again, and let sit again for about 10 minutes. It should have become pudding-like. Spoon into small glasses and top with berries. This can be prepared ahead of time & left in the refrigerator to be served at the end of your meal.
