    Zucchini is a great base for so recipes and this one is as simple and quick as it gets. Thinly shaved zucchini ribbons are given a refreshing twist, served raw with lemon zest and herbs. Alternately, you can create zoodles (zucchini noodles) using a spiralizer, which turns vegetables into fabulous spaghetti substitutes.
